Sweet-Savory Shrimp Ceviche

Place chopped avocado, Lime Olive oil, and lime juice in a bowl and gently stir. Add remainder of ingredients and gently combine. Serve with tortilla chips.

Ingredients

Number Of Servings: 4

12 medium shrimp, deveined, tails removed, cooked and chopped
1 large avocado, chopped in small cubes
2 T of The Olive Bin's Lime Olive Oil
2 limes, juiced to about 2 T, the remainder sliced for garnish
1 medium mango, chopped in small cubes
2 small tomatillos, finely chopped
1 small jalapeno, seeded, finely chopped
1/4 cup red onion, finely chopped
2 T fresh cilantro, finely chopped
Salt and pepper to taste

Directions

  2. Add remainder of ingredients and gently combine.
  3. Serve with tortilla chips.
