White Truffle-Asiago-Cheddar Crackers

Preheat oven to 425 degrees Farenheit. Combine the flour, baking powder, salt, and pepper in a food processor or blender. Pulse a few times to distribute. Add the cheeses and pulse again to finely chop the cheese into the dry ingredients. Add the olive oil and continue to pulse until the oil is incorporated thoroughly. Gather and press the dough into two flat discs. Wrap each disc and chill for an hour. Line a baking sheet. Roll out one disk at a time to 1/4 inch thick. Cut in to squares, rounds, or whatever shape of cracker you'd like. If you'd like, you can cut with a pizza cutter, or a pastry wheel to make ruffled edges. Bake for 9 to 11 minutes or until the edges become golden.

2 1/2 C all-purpose flour, plus more for rolling out dough
1/4 tsp baking powder
1 1/2 tsp salt
1/2 tsp freshly ground black pepper
1 1/2 C aged, sharp shredded cheddar cheese
1 1/2 C shredded Asiago cheese
2 T of The Olive Bin's White Truffle Oil
3/4 C of any of The Olive Bin's Extra Virgin Olive Oils

Additional Info

This is a great alternative to store-bought crackers - give entertaining a special flare without too much extra work! Try serving them with our Chipotle Hummus, Red Pepper Pesto, or Tuscan White Bean Spread.

You can also experiment with other flavored olive oils, in place of the EVOO and White Truffle Oil (subsitute 1 C of any flavored olive oil) for other flavors in your crackers!
