Banana Crumb Muffins

Preheat oven to 375F. Line muffin pan with 12 cake liners. In a large bowl, mix together flour, baking soda, baking powder, cinnamon and salt. In a second bowl, mix together bananas, sugar, egg, vanilla and oil. Add the dry ingredients to the wet until just combined. Using a 1⁄4 C measure, put the batter in the cake liners. Topping:In a small bowl, mix together brown sugar, flour and cinnamon. Add oil and mix until combined. Spoon crumble over.

FOR THE MUFFINS:

1 1/2 C all-purpose flour

1 tsp baking soda
1 tsp baking powder

 1 tsp vanilla extract

3/4 tsp cinnamon

1/2 tsp salt

3 bananas, mashed

3/4 C white sugar

1 egg, lightly beaten

1/3 C of The Olive Bin’s Butter Olive Oil

FOR THE TOPPING:

2/3 C packed brown sugar
1/4 C all-purpose flour
1/4 tsp ground cinnamon
2 T of The Olive Bin’s Butter Olive Oil

Directions

  3. In a second bowl, mix together bananas, sugar, egg, vanilla and oil.
