Whole Wheat Banana Bread

Preheat oven to 350 degrees. Thoroughly grease a standard loaf pan with The Olive Bin's Butter Flavored olive oil. Combine flours, salt, baking powder, and cinnamon in a medium bowl and set aside. In separate bowl, combine Butter Olive Oil and sugar. One at a time, beat in eggs to oil and sugar mixture. Slowly beat in flour mixture to oil mixture, then add bananas. Mix until just incorporated - do not overmix. Stir in nuts (optional). Scrape the batter into loaf pan & spread evenly. Bake until a toothpick inserted in the center comes out clean, 50-60 minutes. Let cool in the pan 5-10 minutes before removing to cool completely on a rack.

1 C mashed very ripe bananas (about 2)
1/2 C toasted chopped walnuts or pecans (optional)
