Baked Blueberry & Peach Oatmeal Bars

Preheat oven to 350 degrees. In a large bowl, combine the oats, brown sugar, baking powder, and salt. Whisk the egg whites, egg, milk, oil, vanilla, and balsamic vinegars. Add to dry ingredients and stir until blended. Let stand for 5 minutes. Stir in peaches and blueberries. Transfer to an 9"x13" baking dish coated with cooking spray. Sprinkle with chopped walnuts or pecans and additional brown sugar to taste (optional) Bake, uncovered, for 35 to 40 minutes, or until top is lightly browned and a thermometer reads 160 degrees. Serve with additional milk, if desired, or cut into squares and freeze for later.

3 C old-fashioned oats
1/2 C packed brown sugar
2 tsp baking powder
1/2 tsp salt
2 egg whites
1 egg
1 1/4 C fat-free milk
1/4 C of any of The Olive Bin's Extra Virgin Olive Oils
1 tsp vanilla extract
1/2 T of The Olive Bin's Blueberry Balsamic Vinegar
1/2 T of The Olive Bin's Peach Balsamic Vinegar
2 C sliced peaches (or fruit of your choice)
1 C fresh or frozen blueberries
1/3 C chopped walnuts or pecans

Directions

Additional Info

Try substituting the peaches with strawberries or another fruit of your choice!
