Lemon Blueberry French Toast

Place 1 C blueberry balsamic into a small saucepan. Over medium high heat, boil balsamic for just 3-4 minutes until slightly thickened. Cool. Whisk eggs, milk, lemon balsamic, and lemon zest together. Heat your griddle, brush or drizzle with lemon olive oil. Dip a slice of bread into egg mix-ture, shake off excess. Place onto hot griddle. Cook until browned, turning once. Serve with Blueberry Balsamic reduction, fresh blueberries, and a touch of maple syrup (if desired).

4 eggs
1/2 C milk
1/4 C of The Olive Bin's Sicilian Lemon Balsamic Vinegar

1/4—1/2 tsp fresh lemon zest

8 slices of your favorite Bread
