Loaded Scrambled Eggs

Heat Cilantro & Roasted Onion olive oil in large nonstick skillet over medium heat. Add inonion, pepper, sea salt, and black pepper; cook until tender, 12 to 14, stirring occasionally. Add eggs and cook, stirring frequently, until the eggs are just set, 1 to 2 minutes. Add Cheddar cheese; cook until just melted, 1 to 2 more minutes, stirring continuously. Remove from heat. Stir in cherry tomatoes, cilantro, and parsley. If desired, serve with crusty bread drizzled with more Cilantro & Roasted Onion olive oil.

8 large eggs, beaten
3/4 C grated Cheddar cheese

1 1/2 T fresh cilantro, chopped
