Pecan Pie Muffins

Preheat oven to 350F. Oil and flour 18 mini muffin cups or line with paper muffin liners. In a medium bowl, stir together brown sugar, flour and pecans. In a separate bowl, beat the olive oil and eggs together until smooth. Stir wet mixture into the dry mixture just until combined. Spoon batter into prepared muffin cups. Cups should be 2/3 full. Bake for 13 minutes. Cool on wire rack.

1/2 C all-purpose flour
1 C pecans, chopped
1/2 C of The Olive Bin's Butter Olive Oil

2 eggs, beaten
