Pumpkin Waffles with Orange Walnut Butter

In a large bowl, combine the flour, brown sugar, cinnamon, salt, baking powder, and baking soda. In another bowl, combine eggs, milk, pumpkin, and Butter olive oil; stir into dry ingredients just until combined. Bake in a preheated waffle iron, according ot manufacturer's directions until golden brown. Meanwhile, for orange walnut butter, combine butter, walnuts, and Blood Orange olive oil in small bowl until blended. Serve waffles with butter mixture and Maple balsamic.

WAFFLES:
1 C + 2 T all-purpose flour
2 T brown sugar
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
2 eggs
1 C milk
1/2 C canned pumpkin
1 1/2 T of The Olive Bin's Butter Olive Oil
ORANGE WALNUT BUTTER:
1/2 C butter, softened
1/4 C chopped walnuts
1/2 T of The Olive Bin's Blood Orange Olive Oil (Fused)
1 T (or more to taste) of The Olive Bin's Maple Balsamic Vinegar

Directions

  1. In a large bowl, combine the flour, brown sugar, cinnamon, salt, baking powder, and baking soda. In another bowl, combine eggs, milk, pumpkin, and Butter olive oil; stir into dry ingredients just until combined.
  2. Bake in a preheated waffle iron, according ot manufacturer's directions until golden brown. 
  3. Meanwhile, for orange walnut butter, combine butter, walnuts, and Blood Orange olive oil in small bowl until blended. Serve waffles with butter mixture and Maple balsamic.
