Spicy Quinoa Breakfast Bowl

Cook quinoa according to package directions. Set aside. Heat Green Chili olive oil in large nonstick skilled over medium heat. Crack eggs, one at a time, directly into skillet; cook 2 to 4 minutes for slightly runny yolks. Season with salt and pepper. Place each fried egg in separate bowl. Top each with quinoa, 1/4 of the avocado and salmon. Drizzle each bowl with Sicilian Lemon balsamic vinegar and top with scallions.

1 C quinoa, uncooked
4 large eggs
2 T of The Olive Bin's Green Chile Olive Oil (Fused)
1/4 tsp sea salt
1/4 tsp fresh ground black pepper
1 avocado, chopped
6 oz smoked salmon
1/2 T of The Olive Bin Sicilian Lemon Balsamic Vinegar
1 T scallions, sliced, for garnish (optional)
