FOR THE ROASTED CHERRIES:
1 C cherries, pitted and halved
1 1/2 tsp of The Olive Bin's Black Cherry Balsamic Vinegar
2 T sugar
FOR THE BROWNIES:
10 T unsalted butter
1 1/4 C granulated sugar
3/4 C + 2 T unsweetened cocoa powder
1/4 tsp salt
1 tsp vanilla extract
2 large eggs
1/2 C all-purpose flour
Powdered sugar, to taste (optional)
Balsamic-Roasted-Cherry Brownies

- Preheat oven to 450 degrees F. Place pitted cherries on parchment-lined baking tray, and sprinkle with sugar and balsamic vinegar. Roast until cherries start releasing their juice, about 10 minutes. Remove from oven and refrigerate while making brownie batter.
- Reduce oven temperature to 350 degrees F. Line an 8x8" baking pan with parchment paper.
- In a medium bowl, combine butter, sugar, cocoa powder, and salt. Microwave on high for 45 seconds. Stir. Continue microwaving in 10-second increments, stirring in between, until butter is melted and mixture is smooth. Add vanilla and eggs; stir until batter becomes thick and shiny.
- Slowly mix in flour; stir until just combined. Fold in roasted cherries.
- Pour batter into prepared baking pan and bake until set, about 25 minutes. Remove from oven and let cool in pan. Dust with powdered sugar before serving (optional).
