Balsamic-Roasted-Cherry Brownies

Preheat oven to 450 degrees F. Place pitted cherries on parchment-lined baking tray, and sprinkle with sugar and balsamic vinegar. Roast until cherries start releasing their juice, about 10 minutes. Remove from oven and refrigerate while making brownie batter. Reduce oven temperature to 350 degrees F. Line an 8x8" baking pan with parchment paper. In a medium bowl, combine butter, sugar, cocoa powder, and salt. Microwave on high for 45 seconds. Stir. Continue microwaving in 10-second increments, stirring in between, until butter is melted and mixture is smooth. Add vanilla and eggs; stir until batter becomes thick and shiny. Slowly mix in flour; stir until just combined. Fold in roasted cherries. Pour batter into prepared baking pan and bake until set, about 25 minutes. Remove from oven and let cool in pan. Dust with powdered sugar before serving (optional).

1 1/2 tsp of The Olive Bin's Black Cherry Balsamic Vinegar
2 T sugar
FOR THE BROWNIES:
10 T unsalted butter
1 1/4 C granulated sugar
3/4 C + 2 T unsweetened cocoa powder
1/4 tsp salt
1 tsp vanilla extract
2 large eggs
1/2 C all-purpose flour
Powdered sugar, to taste (optional)
