6 large baking apples
1 C + 2 T sugar
2/3 C light brown sugar
2 T apple pie spice
2 T of The Olive Bin's Cinnamon Pear Balsamic Vinegar
4 T unsalted butter
2 tsp of any of The Olive Bin's Extra Virgin Olive Oils
2 pie crusts

- Preheat oven to 350 (325 degrees if using a glass pie plate).
- Peel, core, and thinly slice apples.
- In a large bowl, mix apples, 1 C sugar, brown sugar, apple pie spice, and Cinnamon Pear balsamic.
- Place unbaked pie crust in bottom of pie plate. Pour mixture into pie shell.
- Cut slices of butter over apple mixture and cover with second pie crust.
- Make slits in top crust, to allow steam to escape.
- Mix oil with 2 remaining tablespoons sugar and brush on top crust.
- Bake 50 to 55 minutes, or until apples are tender.
