FOR THE CRUST:
2 C flour
1/2 tsp salt
2/3 C shortening
6 T + 1 T water
1 egg yolk
FOR THE PEAR FILLING:
6-8 pears, peeled and sliced
1 T of The Olive Bin's Cinnamon Pear Balsamic Vinegar
6 T flour
1 C sugar
1/2 tsp cinnamon
FOR THE CRUST:

6 T + 1 T water

FOR THE PEAR FILLING:

1 C sugar
1/2 tsp cinnamon
Mix flour and salt; Cut in shortening. Add water 1 T at a time. Use 2/3 dough for bottom crust, 1/3 dough for lattice top.
Mix the ingredients for the pear filling. Pour into prepared pie crust.
Top with lattice strips. Brush lattice strips with mix of 1 egg yolk and 1 T water. Cover crust edges with foil for 15 minutes. Remove foil and continue baking pie for 40 more minutes at 375 degrees.
