Classic Olive Oil Chocolate Chip Cookies

Preheat the oven to 350°F and line a baking sheet with parchment paper. In a large bowl, beat together olive oil and brown sugar for about 1 minute until smooth. Add eggs and vanilla, mixing until combined. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until fully combined. Fold in chocolate chunks. Chill the dough for at least 1 hour. Scoop dough onto prepared baking sheet, spacing 2 inches apart. Bake for 8-10 minutes, until edges turn golden. Cool and sprinkle with a touch of salt before serving.

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 cup dark brown sugar

  • 3 cups all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup dark chocolate chunks
