Butternut Squash Goat Cheese Dip

Preheat oven to 425 degrees. Toss the squash with the olive oil, salt, pepper, and garlic powder. Spread out on baking sheet and bake 20 minutes, toss, and bake another 20 minutes. Turn oven down to 350 degrees. Add squash to food processor with olive oil drippings, along with remaining ingredients. Blend until smooth and add salt and pepper to taste. Place in oven proof dish and bake for 20-25 minutes. Stir until super creamy. Top with additional oil if desired and fresh herbs.

Ingredients

2 1/2 C cubed butternut squash
3 T of The Olive Bin's Basil Olive Oil
1/2 T salt
1/2 T black pepper
1/4 T garlic powder
A few grates of fresh nutmeg
11 oz goat cheese, at room temperature
3 T freshly chopped herbs: oregano, basil, parsley
