Peach Balsamic Onion Jam

In a large sauce pan with a lid, heat oil. Add the onions, cover and cook on low, stirring occasionally until translucent but not browned. Sprinkle with sugar, cover and continue to cook, stirring occasionally for about 30 minutes or onions are golden and soft. Add the water, sprinkle with salt, cover and continue to cook on low, stirring occasionally for another 20 minutes or until the onions are a rich, dark brown. Add the vinegar and cook 10 more minutes, uncovered. Serve as is, or store in air tight jar and refrigerate up to 1 week.

Ingredients

4 onions, cut into 1/4 inch thick half rounds

1/2 C water
2 T brown sugar
2 T Peach Balsamic vinegar

2 T of The Olive Bin's Garlic Olive Oil

Pinch of salt
