Champagne Dressing


3 egg yolks
1 T Dijon mustard
1/2 C of The Olive Bin's Champagne Wine Vinegar
2 C corn oil
Salt and pepper to taste


  1. Combine egg yolks, mustard, and vinegar in food processor. Season to taste with salt and pepper. Process for 1 minute. 
  2. With the processor mixing, slowly and steadly dribble olive oil in. 
  3. If seasoning needs to be corrected, change where needed and reblend.
