Mango Black Cherry Chutney

Combine all ingredients in large skillet, and bring to a boil. Reduce heat to low for 25 to 30 minutes, stirring occasionally to prevent sticking or burning. Sauce will start to thicken as balsamic reduces. (See more about making balsamic reductions.) Remove from heat and let cool. Serve with pork or chicken.

2 fresh mangoes, peeled and sliced
1/3 C of The Olive Bin's Black Cherry Balsamic Vinegar
1/3 C packed light brown sugar
2 tsp minced garlic
2 dashes dried ginger
2 dashes cayenne pepper
Salt and pepper, to taste
