Apple Smoked Ribs

Preheat the oven to 425°F. Line a baking pan with parchment paper. In a bowl, whisk marinade ingredients. Place ribs meat side down on prepared baking pan. Pour half the marinade over ribs, turn and top with remaining marinade. Bake ribs, uncovered, for 10 minutes. Remove ribs from oven and cover tightly with aluminum foil. Reduce heat to 250°F and return covered ribs to oven for 1 1/2 hours. Remove ribs from oven and baste both sides with juices in the pan. Bake uncovered (meat side up)for 20 minutes or until carmelized. Serve immediately.

Ingredients

1/4 C of The Olive Bin's Olive Wood Smoked Olive Oil
1/2 C of The Olive Bin's Red Apple or Green Apple Balsamic Vinegar

2 T fresh rosemary leaves, chopped
2 T fresh oregano leaves, chopped
1 T smoked paprika
2 tsp sea salt
2 tsp cracked black pepper
2 racks of pork ribs (3-4 lb in total)
