1. In a heavy bottom sauve pan add your sugar in an even layer and cook on medium-low heat ( DO NOT STIR) until you can see parts of the bottom of the pan through the dissolved sugar, then stir gently and continue cooking for around 15 minutes or until the sugar is a dark amber color and smells nutty and almost bitter.
2. Meanwhile heat your heavy cream in the microwave for 2 minutes, make sure to heat in 30 second incriments to ensure it doesnt explode.
3. In a large bowl add softened cream cheese, dark brown sugar and vanilla extract and mix with a hand mixer for 3 minutes.
4. Once you sugar is carmelized add butter and whisk vigorously until combined, then add heady cream and whisk vigorously until everything is smooth and combined, it will bubble up but just keep stiring.
5. After the carmel has cooled for atleast 4-5 minutes stir in The Olive Bins green apple white balsamic vinegar and vanilla extract.
6. In a 9x13 inch baking pan, layer cream cheese mixture with the carmel ontop, sprinkle chocolate chips and butterscotch chips ontop the carmel layer. Alternatively use health toffee bits.
7. Serve with green apples or graham crackers.
