Creamy Tuscan Chicken with Spinach and Sun-Dried Tomatoes

Heat skillet with half of the Tuscan Herb oil and brown chicken on all sides. Transfer to plate and set aside. In the same pan, saute garlic and onion until tender. Add white wine, bring to a boil, and allow to reduce to half. Reduce heat to medium-low. Add cream and tomatoes. Simmer 15 minutes. Add spinach leaves and allow to wilt. Top with parsley.

Ingredients

1/4 C  of The Olive Bin's Tuscan Herb Olive Oil, divided

4 cloves garlic, finely diced

1 lb boneless, skinless chicken breasts, halved

1 small yellow onion, diced

1/2 C white wine

1 - 8oz jar sun-dried tomato strips

1 pint heavy cream

3 C baby spinach

1 T fresh parsley, chopped

Salt and pepper to taste
