Easy Balsamic Chicken Skewers

In small bowl, combine 1/2 C balsamic vinegar and 2 T honey; set aside. In medium bowl, whisk together remaining balsamic vinegar, honey, and olive oil. Add chicken cubes to bowl of marinade, or place marinade and chicken cubes together in a large Ziploc bag; toss until chicken is evenly coated. Seal/cover and refrigerate for at least 10 minutes, up to 8 hours (we recommend 1 hour minimum). NOTE:If you are using wooden skewers, set them to soak in a pan of water for at least 10 minutes so they do not burn. When ready to cook chicken, heat a grill to medium-high heat. Lightly grease grill with cooking spray. Remove chicken pieces from marinade, and thread chicken onto skewers. Season skewers generously with salt and pepper. Cook on grill for 3 to 4 minutes per side, turning skewers once, or until chicken is cooked through and no longer pink inside. Remove chicken skewers from grill and place on a serving plate. Meanwhile, pour small bowl of balsamic-honey combination into small saucepan and bring to boil over medium-high heat. Reduce heat to medium-low and simmer for about 12 minutes, or until mixture is reduced by half and thick enough to coat the back of a spoon. Remove from heat, and brush the balsamic reduction onto skewers until they are all evenly coated. Serve immediately.

1/2 C + 1 C of The Olive Bin's Fig Balsamic Vinegar
2 T + 2 T honey
1/2 C of The Olive Bin's Herbes de Provence Olive Oil
2 lb boneless, skinless chicken breasts, cut into bite-sized pieces
Sea salt and fresh ground black pepper
Wooden or metal skewers

These chicken skewers are incredibly easy, yet delicious. If you're not a fan of Herbs de Provence/Fig, try experimenting with other oil-and-vinegar flavor combinations.

You can also add fresh veggies (onion, peppers, mushrooms, etc.) to these skewers for extra deliciousness! Just add veggies of your choice in between cubes of chicken before grilling and proceed with recipe as directed.
