Feta Shrimp Skillet

In a large skillet, heat olive oil over medium-high heat. Add onion; cook and stir 4 to 6 minutes or until tender. Add garlic, oregano, pepper, and salt. Cook 1 minute longer. Stir in tomatoes and Sicilian Lemon balsamic vinegar. Bring just to a boil. Reduce heat immediately; simmer, uncovered, 5 to 7 minutes or until sauce is slightly thickened. Add shrimp and parsley; cook 5 to 6 minutes or until shrimp turns pink, stirring occasionally. Remove from heat; sprinkle with feta. Let stand, uncovered, until cheese is softened. Serve immediately.

1 T of The Olive Bin's Garlic Olive Oil
1 medium onion, finely chopped
2 garlic cloves, minced
1 tsp dried oregano
1/2 tsp pepper
1/4 tsp salt
3 1/2 C fresh tomatoes, diced
3 T of The Olive Bin's Sicilian Lemon Balsamic Vinegar
1 lb uncooked medium shrimp, peeled and deveined
2 T minced fresh parsley (or 2/3 T dried parsley)
1/4 C crumbled feta cheese
