Maple Balsamic Chicken & Sweet Potatoes

Preheat oven to 400F. Line baking sheet with parchment paper. Set aside. Place sweet potatoes in a large bowl and toss with butter olive oil. Place on prepared baking sheet. Bake until tender (15-20 minutes). Remove and mash or keep cubed, if desired. Meanwhile, lightly coat chicken with steak seasoning. Heat unflavored olive oil in large skillet over medium-high heat; add chicken. Cook 5 to 6 minutes until no longer pink (170 degrees F), turning once halfway through cooking. Remove from skillet; cover and keep warm. Stir maple balsamic into hot skillet; cook 2 minutes. Stir in green onions. Divide chicken and potatoes among 4 plates. Drizzle with maple balsamic mixture.

4 large sweet potatoes, peeled and cubed

2 T of The Olive Bin's Butter Olive Oil

1 lb chicken breast

2 tsp steak grilling seasoning blend

2 T of any of The Olive Bin's Extra Virgin Olive Oils

1/4 C of The Olive Bin's Maple Dark Balsamic Vinegar

1/2 C sliced green onion (about 4)

Directions
