Maple-Peach Glazed Ham

Preheat oven to 325 degrees. Place ham on a rack in a shallow roasting pan. Cover and bake 1 1/2 to 2 hours, or until thermometer reaches 130 degrees. Meanwhile, in a small saucepan, mix preserves, Maple balsamic, Peach balsamic, orange juice, and ancho chili pepper until well-blended. Remove 3/4 C mixture for glaze and set aside. Remove ham from oven; brush with some of the peach-maple mixture. Bake, uncovered, for 15 to 20 minutes longer, or until a thermometer reads 140 degrees, brushing occasionally with remaining mixture (leaving 3/4 C for glaze still set aside). Return remaining 3/4 C mixture to the saucepan; bring to a boil over medium heat, stirring occasionally. Cook and stir 1 to 2 minutes, or until slightly thickened. Serve glaze with ham.

2 C peach preserves
1/2 C of The Olive Bin's Maple Balsamic Vinegar
1/4 C of The Olive Bin's Peach Balsamic Vinegar
1/4 C orange juice
2 T ground ancho chili pepper (optional)
