Michelle's Steak Fajitas

Mix olive oil, galirc, 1/2 medium onion finely chopped, cilantro, jalapeno, and spices in a gallon Ziploc bag. Add sirloin steak and marinate for 4-8 hours. Put sliced peppers and onions in a Ziploc bag with a drizzle of Chipotle olive oil, sea salt, and pepper. Marinate for an hour before cooking. For medium rare/medium fajitas, heat grill to high and sear steak for approximately 2 minutes. Turn 90 degrees for another 2 minutes to get criss-cross grill marks. Flip over and repeat. Remove from heat and let stand for 10 minutes with foil tented over it. Remove foil and slice thin against the grain. Sear veggies in a grill pan or cast iron pan - or wrap loosely in foil and place on top rack of grill while meat is cooking. Serve with soft tortillas and fresh salsa!

1 clove crushed fresh garlic
1/2 medium onion, finely chopped, plus 1-2 medium onions, sliced
1/2 C chopped fresh cilantro
1 fresh jalapeno, diced
Ancho chile powder or smoked paprika, to taste
Black pepper, to taste
Sea salt, to taste
1-2 bell peppers (any color), sliced
