Peach & Lime Gouda Panini

Place the Peach balsamic in a small saucepan, bring to a simmer, and reduce the volume by one third. Let cool to room temperature. Preheat a panini press. Brush both sides of each bread slice with the Lime Olive Oil and place in panini press to mark and grill the bread. Remove half of the bread from the press; set aside. Place a few slices of cheese on top of the bread slices in the press, followed by a few slices of of peaches. Place some arugula on top of the peaches. Season with salt and pepper, and drizzle with the peach reduction. Take the bread slices not on the press and place back on the other half, to close the sandwiches. Close the press to melt all together. Cut in half and serve immediately with more Peach balsamic reduction for dipping.

1/4 C of The Olive Bin's Peach Balsamic Vinegar
2 fresh ripe peaches, washed and sliced
8 oz gouda or taleggio cheese, thinly sliced
1 T of The Olive Bin's Lime Olive Oil
6 slices of crusty ciabbata or paesano bread
4 oz fresh arugula
kosher salt and freshly cracked black pepper
