1 can light beer (can substitute with apple juice or chicken broth)

Mix together olive oil and balsamic vinegar and rub pork chops on all sides with the mixture

Liberally rub the pork chops with all-purpose rub. Marinate chops in beer or other liquid for 2-3 hours before baking

Preheat oven to 325 degrees F. Place chops on a foil-lined baking dish and pour excess liquid from the marinade into the dish. Insert a meat thermometer into the thickest part of the chop and bake until internal temperature reaches 140 degrees (approximately 25 minutes - turning chops over at 15 minutes)

Turn oven to broil and bake for an additional 3 - 5 minutes or until internal temperature reaches 145 degrees. Let rest for 5-10 minutes
