Raspberry Balsamic Marinated Chicken

Remove excess fat from chicken and place in plastic bag. Combine remaining ingredients and pour over chicken. Marinate 4 hours to overnight. Heat oven to 350F. Place chicken on lined pan cover with foil and bake 30-35 minutes. Place remaining marinade in sauce pan and simmer 15 minutes. After main cook time, uncover chicken and baste with marinade every 5 minutes until cooked through. This will take approximately 15-20 minutes.

1.5 lb chicken breast halves

3/4 C of The Olive Bin's Raspberry Dark Balsamic Vinegar

1/2 C chicken stock

2 T of The Olive Bin's Tuscan Herb Olive Oil

1 T lemon juice

2 shallots, finely chopped

1/4 t black pepper
