Spanish Tilapia

Pat tilapia filets dry, then season each side thoroughly with 2 T Spanish paprika, salt and black pepper. In an oven safe pan heat 3 T of The Olive Bins Chimichurri Verde Olive Oil over medium heat, then sear the filets for 2 minutes per side, then set aside for later. In that same pan add onion, bell pepper, garlic, and olives if using, cook for 4-5 minutes, then add tomato paste and cook down for 3-4 minutes to build more tomato flavor. Next deglaze the pan with your white wine, scraping the bottom of the pan to get all the flavor, reduce the wine by half to cook out the alcohol. Then add the tomato sauce, 1 T Spanish paprika, salt + black pepper and the fresh parsley. Add tilapia filets back to the sauce as well as seasoning with salt + black pepper, let simmer for 10 minutes. Serve with white rice or crusty bread!

Ingredients

2 tilapia filets 

3 T The Olive Bin's Chimichurri Verde Olive Oil 

3/4 C dry white wine (I used chardonay)

1 15oz can of tomato sauce 

1 T tomato paste

1/2 onion (minced)

1 green bell pepper (minced)

4 cloves garlic (minced)

1/4 cup parsley (minced)

3 T smoked spanish paprika (divided- 2 T for fish, 1 T for the sauce)

salt + pepper to taste

1/2 C olives (chopped) -OPTIONAL
