Tropical Coconut Lime Shrimp

Toss shrimp with oil, salt, and chili flakes in a bowl. Heat nonstick pan over medium-high heat. Add balsamic. Bring to a boil and then add shrimp, bell pepper, and red onion. Saute for 2 minutes. Add mango and stir to combine. Remove from heat and top with cilantro.

Ingredients

3/4 lb large shrimp, shelled and deveined

1 T of The Olive Bin's Lime Olive Oil

1/4 C of The Olive Bin's Coconut White Balsamic Vinegar

1/2 red bell pepper, diced

1/4 C red onion, diced

1/4 C mango, chopped

Pinch red chili flakes

1 T fresh cilantro

Salt to taste

Directions

  3. Add mango and stir to combine. Remove from heat and top with cilantro.

Additional Info

Serve over rice or in tacos with your favorite toppings.
