Cacio E Pepe with Lemon Pepper Fettuccini

Cook pasta according to package directions, but drain one minute before tender. Reserve one cup of pasta water Warm butter olive oil. Once warmed, add half a cup of reserved pasta water and bring to a simmer. Add cooked pasta and peppercorn olive oil. Reduce heat to low and add Grana Padano/Parmesan, tossing and coating until melted. Remove from heat and add Pecorino. Toss until melted and pasta is coated, adding more pasta water if to dry.

1 package of The Olive Bin's Lemon Pepper Fettuccini

2 T of The Olive Bin's Peppercorn Olive Oil

4 T of The Olive Bin's Butter Olive Oil

1 1/4 C finely grated Grana Padano or Parmesan cheese

2/3 C finely grated Pecorino cheese
