Chili-Garlic Shrimp Noodle Bowl

Cook soba noodles according to package directions. Toss together with 2 T olive oil, lime juice, soy sauce, and Sesame oil. Heat remaining 2 T olive oil in large skillet over medium heat. Add shrimp and cook until opaque throughout (approximately 2 to 3 minutes), tossing frequently. Add shrimp to noodle mixture and stir in Asian chili-garlic sauce. In medium bowl, toss cabbage, snap peas, and carrots. Serve shrimp and noodles over cabbage mixture, with lime wedges and additional chili-garlic sauce on side, if desired.

8 oz soba noodles
2 T + 2 T of The Olive Bin's Harissa Olive Oil
2 T lime juice
2 T reduced-sodium soy sauce
1 tsp of The Olive Bin's Japanese Toasted Sesame Oil
1 lb peeled and deveined medium shrimp
1 T Asian chili-garlic sauce (plus additional for drizzle, if desired)
2 C purple cabbage
2 C halved snap peas
4 whole carrots, thinly sliced
Lime wedges, for garnish
