FOR THE PASTA:
8 oz farfalle pasta, cooked according to package instructions, drained
1 C roasted chicken, shredded
1 medium zucchini, thinly sliced
2 small yellow squash, thinly sliced
2 apples, coarsely chopped
1/3 C flat leaf parsley, chopped
1/4 C walnuts, toasted
1/4 C gorgonzola cheese
FOR THE DRESSING:
1/4 C of The Olive Bin's Sicilian Lemon Balsamic Vinegar
1/4 C of The Olive Bin's Lime Olive Oil
1 T Dijon mustard
1 clove garlic, minced

- Combine all pasta ingredients in large bowl.
- Whisk together all dressing ingredients. Pour over pasta salad; toss to coat. Enjoy!

This delicious and healthy pasta salad is also great when made with peaches (instead of apples) and Peach balsamic vinegar.
