Beet Salad

FOR THE SALAD: Drain beets and dry on paper towels. Dice into cubes Add dressing (below)to desired amount. FOR THE DRESSING: Whisk eggs, then add sugar. Add remaining ingredients, except balsamic, and bring to a boil until thickened. Add balsamic and cook until thick. Add to cubed beets.

Ingredients

FOR THE SALAD:

2 15 oz cans whole beets, organic

 

FOR THE DRESSING:

2 eggs

1/2 C sugar

1 tsp dry mustard

1 T flour

1 T butter

1/2 C of The Olive Bin's Blackberry Ginger Balsamic Vinegar

1/2 C water

Directions

FOR THE SALAD:
