1/4 C of any of The Olive Bin's Extra Virgin Olive Oils
4 T of The Olive Bin's Orange Vanilla Balsamic Vinegar (Seasonal)
1 T fresh parsley, chopped
1 tsp Dijon mustard
1 tsp salt
1/2 tsp sugar
1 bag (10 oz) shredded carrots
1/2 C Craisins
1 Granny Smith apple, chopped
1/2 C slivered almonds

Directions
- Combine olive oil, balsamic vinegar, parsley, mustard, salt, and sugar in a small bowl.
- Combine carrots, Craisins, apples, and almonds in a large bowl.
- Add dressing and mix thoroughly.
- Cover and refrigerate for 2 hours or overnight before serving.
