Cara Cara Carrot Salad

Combine olive oil, balsamic vinegar, parsley, mustard, salt, and sugar in a small bowl. Combine carrots, Craisins, apples, and almonds in a large bowl. Add dressing and mix thoroughly. Cover and refrigerate for 2 hours or overnight before serving.

Number Of Servings: 4

1/4 C of any of The Olive Bin's Extra Virgin Olive Oils
4 T of The Olive Bin's Orange Vanilla Balsamic Vinegar (Seasonal)
1 T fresh parsley, chopped
1 tsp Dijon mustard
1 tsp salt
1/2 tsp sugar
1 bag (10 oz) shredded carrots
1/2 C Craisins
1 Granny Smith apple, chopped
1/2 C slivered almonds

Directions

  1. Combine olive oil, balsamic vinegar, parsley, mustard, salt, and sugar in a small bowl. 
  2. Combine carrots, Craisins, apples, and almonds in a large bowl.
  3. Add dressing and mix thoroughly. 
  4. Cover and refrigerate for 2 hours or overnight before serving.
