Chicago Citrus Salad

Peel a fresh beet and cut into cubes. Coat with Chipotle Olive Oil and spread out on a baking sheet with sides. Roast at 400 degrees for 40 mins or until done. Let cool. Meanwhile, mix equal parts of olive oil and Lemon balsamic, shake well. Place greens on a plate. Top with beets, grapefruit pieces and orange pieces. Drizzle with Lemon vinaigrette, and top with salt and pepper.

FOR THE SALAD:

Mixed greens
