Grapefruit and Avocado Salad

Arrange the grapefruit sections, avocado slices, and onions attractively in a shallow serving dish. In a bowl, whisk together the orange juice, EVOO, Grapefruit Balsamic, and honey until well combined; drizzle the dressing over the grapefruit mixture. Season to taste with salt and black pepper. For best flavor, chill for 30 minutes before serving. *For a heartier option, add 1 lb cooked and peeled shrimp.

4 large red grapefruit, peeled and sliced
4 avocados, peeled, pitted, and sliced
1 small red onion, finely diced
1/4 C orange juice
3 T of any of The Olive Bin's Extra Virgin Olive Oils
3 T of The Olive Bin's Grapefruit Balsamic Vinegar (Seasonal)
2 T honey
Salt and freshly ground black pepper, to taste
