Italian Salad with Lemon Vinaigrette

In large bowl, lightly toss together spring mix, red onion, mushrooms, olives, and pepperoncini. If desired, add optional toppings. In small bowl, whisk vinaigrette ingredients until blended. Serve on side with salad, or toss into salad to lightly coat.

Number Of Servings: 8

FOR THE SALAD:
1 pkg (5 oz) spring mix salad greens
1 small red onion, thinly sliced
1 C sliced fresh mushrooms
1 C assorted olives, pitted and coarsely chopped
8 pepperoncini
Other optional toppings: chopped tomatoes, shredded carrots, grated Parmesan cheese
FOR THE VINAIGRETTE:
1/4 C of The Olive Bin's Milanese Gremolata Olive Oil
3 T of The Olive Bin's Sicilian Lemon Balsamic Vinegar
2 T lemon juice
1/2 tsp Italian seasoning
1/4 tsp salt
1/4 tsp pepper
