Sausage Spinach Salad

In a large nonstick skillet, heat 1 tsp Cilantro & Roasted Onion olive oil over medium heat. Add sausage and onion; cook and stir until sausage is lightly browned and onion is just tender. Remove from heat and set aside. Place spinach in a large bowl. In a small bowl, whisk vinegar, mustard, and remaining olive oil. Drizzle over spinach; toss to coat. Add sausage mixture; serve immediately.

1 tsp + 3 tsp of The Olive Bin's Cilantro & Roasted Onion Olive Oil
2 fully-cooked sausage links (3 oz each), cut into 1/4-in slices
1/2 medium onion, halved and sliced
4 C fresh baby spinach
1 1/2 tsp of The Olive Bin's Traditional 18-Year Balsamic Vinegar
1 tsp stone-ground mustard

Directions
