Tuscan Herb & Peach Flatbread

Pour balsamic into a deep skillet over medium heat. Cook and simmer until reduced to slightly under 3 T, about 10 minutes, stirring occasionally. Preheat oven to 500F. Brush flatbreads with Tuscan Herb Oil. Layer with thinly sliced mozzarella cheese and thinly sliced peaches. Bake for 4-8 minutes or until cheese is melted and bubbly. Remove from oven. Sprinkle with chopped basil and drizzle with Peach Balsamic reduction. Enjoy!

Ingredients

2 large flatbreads
1-2 T of The Olive Bin's Tuscan Herb Olive Oil

1-2 fresh, ripe peaches
4 oz fresh mozzarella, sliced
1/3 C fresh chopped basil (about 6-8 leaves)
1/4 C of The Olive Bin's Peach Balsamic Vinegar
