Ultimate Grilled Cheese

Cut cheese into 12 (1/2-oz)slices; set aside. Brush one side of each slice of bread with butter. Place four slices, buttered side down, on waxed paper. Top the four bread slices each with three slices cheese, avocado, red bell pepper, and red onion. Top sandwiches with remaining bread slices, buttered sides up. In a large skillet, cook sandwiches over medium-high heat for 6 to 8 minutes, or until bread is toasted, turning once halfway through cooking. (For easier cooking, place sandwiches in a sandwich press and cook about 6 minutes or until done.)Serve immediately.

6 oz cheddar or white cheddar cheese
8 slices whole grain bread
1/4 C of The Olive Bin's Butter Olive Oil
2 avocados, peeled, seeded, and sliced
1 red bell pepper, seeded and thinly sliced
1 C red onion, chopped
