Cherry Lime Granola

Preheat the oven to 325 degrees. Line a large rimmed baking sheet with parchment paper. Mix together the first four (dry)ingredients and spread out into an even layer over the lined baking sheet. In a medium pot set over low heat, or in the microwave, gently warm the honey so that it becomes more fluid. Whisk the Lime olive oil into the warm honey. Add the vanilla. It won't completely blend together, but that's alright. Evenly drizzle the honey-olive oil mixture over the oats mixture on the baking sheet. Gently toss everything to coat as much of the oats with honey mixture as possible. Redistribute into an even layer. Bake on the middle rack of the oven for approximately 30 minutes, stirring every 10 minutes. When the granola is fragrant and golden brown, remove from the oven and stir one last time to ensure even distribution of the honey mixture. Allow to cool completely and store in an airtight container for up to 3 weeks.

1 C cashews
1 C unsweetened, large flake coconut
1 C dried cherries
1/2 C of The Olive Bin's Lime Olive Oil
1/2 C honey
1 tsp vanilla extract
