Healthy Apricot-Almond Balls

In large mixing bowl, stir together oats, cereal, almonds, apricots, flaxseed meal, chia seeds, chocolate chips, and salt. In small bowl, combine almond butter, oil, agave nectar, and vanilla; stir until combined. Add to oat mixture; beat with electric mixer on medium-low speed until thoroughly combined. Shape mixture into 1-inch balls. Transfer to an airtight container. Chill for 30 minutes. For more convenient serving, wrap balls individually in plastic wrap. Store in refrigerator for up to 1 week or in freezer for up to 1 month. NOTE:Serving size equals 2 balls.

1 C old-fashioned rolled oats
1 C whole grain crisp rice cereal
1 package (2 oz) sliced almonds
1/2 C chopped dried apricots
1/4 C ground flaxseed meal
2 T chia seeds
2 T mini semisweet chocolate chips
1/4 tsp salt
3/4 C unsalted almond butter
3 T of any of The Olive Bin's Extra Virgin Olive Oils
3 T agave nectar
1 tsp vanilla extract
