Healthy Vanilla-Almond Granola

Preheat oven to 300 degrees F. Line a large baking sheet with parchment paper or a silicone baking mat. Toss oats, almonds, cinnamon, and salt in a large bowl; set aside. In a medium bowl, whisk honey and oil together until just combined. Whisk in the almond and vanilla extracts. Pour over oats and toss to coat. (Make sure all of the oats are moistened.) Spread onto prepared baking sheet and bake for 35-45 minutes, stirring every 10-15 minutes, or until granola is slightly toasted. Allow granola to cool completely; the air will help it obtain a crunchy texture. Remains fresh in airtight container at room temperature for up to 3 weeks.

2 1/2 C old-fashioned rolled oats
3/4 C slivered almonds
1/2 tsp ground cinnamon
1/8 tsp salt
1/2 C honey
1/4 C of The Olive Bin's Roasted Almond Oil
1/8 tsp almond extract
1 T vanilla extract

Additional Info

This granola is easy to make and very healthy! It seems like a lot of vanilla extract (yes, it is a full tablespoon), but the extracts and honey combine to make a fully-sweet granola without adding lots of unhealthy sugars. You can also vary the recipe by adding additional nuts; if you choose to do this, just use less oats.

Delicious served over yogurt or fruit, or eaten by itself served with milk!
