Balsamic Sweet Potatoes


Number Of Servings: 4

4 C peeled, chopped sweet potatoes

1 sweet onion, cut into wedges

2 cloves garlic, sliced

3 T of The Olive Bin's Tuscan Herb Olive Oil

1 T of The Olive Bin's Traditional 18-Year Dark Balsamic Vinegar (or The Olive Bin's Cinnamon Pear Dark Balsalmic Vinegar)

dash of salt and pepper


  1. Preheat the oven to 425 degrees.
  2. Mix sweet potatoes, sweet onions, and garlic in a bowl. Drizzle olive oil over the mixture and toss to coat. Pour mixture into a shallow roasting pan. Roast sweet potato mixture, turning frequently, until the vegetables are soft and golden brown, 30-35 minutes.
  3. Drizzle 1 T of balsamic vinegar over the vegetables; season with salt and pepper.
