Balsamic Tomatoes

Marinate thickly sliced tomatoes for 2 1/2—4 hours in Traditional Balsamic—just enough to cover. Remove from the balsamic and shake off the excess. Place on a sheet pan with sides. Bake at 350 degrees for 7 minutes, or until slightly tender. Meanwhile, add olive oil to a medium skillet. When the oil is hot, sauté spinach and garlic with a dash of salt until wilted. Remove tomatoes from the oven and put some of the spinach on top of each tomato. Sprinkle with cheese. Put the oven on broil, return pan to the oven and broil until cheese is golden—just a minute or two. Be sure to watch the pan carefully so it won’t burn.

Garden fresh tomatoes

The Olive Bin's Traditional 18-Year Dark Balsamic Vinegar

1 T (or so) of any of The Olive Bin's Olive Oils

A bag full of spinach

Garlic, chopped

1/4 - 1/2 C Parmesan cheese, shredded
