Lime & Tangerine Cauliflower Rice

Pulse the cauliflower florets in a food processor until rice grain-sized. Set aside. Saute the onion and garlic in 1 T of olive oil in pan until tender. Now add the cauliflower. Pour in the oil and balsamic. Add the cumin and coconut flakes (if using). You can also add some raisins and/or pine nuts here. Add salt and black pepper. Keep sautéing, and moving everything around. The cauliflower rice is done when it is still slightly crunchy but mostly soft. Add the cilantro and cook for 1 minute more, then serve and enjoy!

Ingredients

1 head of cauliflower, broken into small florets

½ yellow onion, chopped

2 garlic cloves, minced

3 T + 1 T of The Olive Bin's Lime Olive Oil

3 T of The Olive Bin's Tangerine Dark Balsamic Vinegar

½ tsp ground cumin

Small handful coconut flakes (optional)

A few raisins and/or pine nuts (optional)

Salt and black pepper, to taste

Small handful finely chopped cilantro
