Marinated Brussel Sprouts with Sausage

Place brussel sprouts, onions, and orange slices in a Ziploc bag. Squeeze juice from the other half of the orange into the bag. Add sea salt, pepper and fennel seeds. Drizzle the Blood Orange oil into the bag. Close the bag, expressing the air, then massage the contents to mix. Refrigerate for at least 2 hours or longer, if time permits. Heat a deep skillet with about 1 T extra virgin olive oil. Cook the sausage until lightly browned. Add the contents of the Ziploc bag. Sauté until the Brussel sprouts are tender. Serve Immediately.

1 lb fresh brussel sprouts, cleaned and halved

4 spring onions, cleaned and sliced

1 orange, with one half sliced

1/2 T fennel seeds

1/2 tsp sea salt

Cracked pepper

The Olive Bin's Blood Orange Olive Oil

Any of The Olive Bin's Extra Virgin Olive Oils

1 C sausage
