Roasted Balsamic Beets and Carrots

Preheat the oven to 425 F. Combine beets, carots, olive oil, thyme, salt, and pepper into a bowl and toss to coat. Then spread the mixture out on a baking sheet in a single layer. Roast them for 25-30 minutes or until vegetables are tender and begin to wrinkle, tossing once halfway through cooking. Place vegetables back in the bowl when done, add balsamic, and toss to coat. Serve immediately.

Number Of Servings: 4

3-4 beets, cubed
3-4 carrots, slicked into rounds
1 T of any of The Olive Bin's Extra Virgin Olive Oils
2 tsp dried thyme
2 T of The Olive Bin's Maple Balsamic Vinegar
Salt and pepper, to taste

Directions
